Pumpkin Muffins
Ingredients
- 3 C. flour
- 1 C. brown sugar
- 2 Tbs. white sugar
- 4 tsp. (rounded) baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. pumpkin pie spice
- 1/4 tsp. cloves
- 1/4 tsp. allspice
- 1/4 tsp. ginger
- 1 C. milk
- 1 C. canned pumpkin
- 1/2 C. unsweetened applesauce
- 2 eggs
Directions
Mix all ingredients. If desired, add 3/4 C. raisins and 1/2 C. coarsely chopped walnuts. Fill sprayed muffin tins almost to top. Bake at 325 degrees for 20-25 minutes.
Yield: 14-16 muffins
