  • 1 tsp. extra-virgin olive oil
  • 1 onion, shopped
  • 1 clove garlic, chopped
  • 1 tsp. fresh ginger
  • 1 regular potato, peeled and shopped
  • 1 tsp. tomato paste
  • 1 can pumpkin
  • 1 C. chicken broth
  • 1/2 cup milk
  • Pepper and salt to taste

In a large pan over medium-high heat, pour olive oil. Saute onion, garlic, ginger, potato and tomato paste until potatoes are softened. Transfer mixture to pot over stove and add remaining ingredients. Mix until hot. Add salt and pepper to taste.
