Pumpkin Pound Cake with Cream Cheese Icing

For a delicious autumn dessert, try this pumpkin-flavored cake.

Ingredients

  • Cake:
  • 2 C. plain flour
  • 2 C. sugar
  • 2 tsp. soda
  • 4 eggs
  • 1 Tbs. cinnamon
  • 1 C. oil
  • 1/4 tsp. salt
  • 2 C. pumpkin
  • Cream Cheese Icing:
  • 8 oz. cream cheese
  • 1 tsp. vanilla
  • 1 box confectioners’ sugar
  • 1 stick butter

Directions

To make cake, mix ingredients well. Grease tube or Bundt pan and bake 1 hour and 15 minutes at 350 degrees. Cool completely and frost.

To make icing, let cheese and butter soften and mix with sugar and vanilla and spread on cake.
