Ingredients

  • 2 boneless skinless chicken breasts, cubed
  • 1 C. white rice
  • 3 C. chicken or vegetable broth
  • 2 C. diced pumpkin
  • 1 T. pumpkin puree
  • ½ medium onion, chopped
  • 2 cloves garlic, pressed
  • 1 tsp. thyme
  • 1/2 tsp. grated ginger
  • olive oil
  • salt, black pepper, and sweet paprika to taste

Directions

Preheat your oven to 350°F. In a large skillet, heat a splash of olive oil over medium heat. Season the chicken with salt, pepper, and sweet paprika. Add to skillet and cook until no longer pink. Remove chicken from skillet and set aside. Pour another splash of olive oil into the pan and sauté the onions for two minutes. Add garlic, ginger, thyme, and diced pumpkin. Let cook for 10 minutes before adding the rice. Pour in chicken stock and add pumpkin puree. Transfer skillet to your preheated oven and cook for 30 minutes. Remove, add chicken, and cook for another 10 minutes. Let stand for 10 minutes before serving.
