Pumpkin Shortbread Sandwich Cookies

- 1 stick butter, softened
- ½ C. powdered sugar
- 1 ¼ C. flour
- ¼ C. pumpkin butter
- Chocolate sauce or caramel sauce
In a large bowl, use an electric mixer to mix butter and powdered sugar until pale and creamy. Add in pumpkin butter, mix until smooth, and pour in flour. Combine until dough forms. Refrigerate for an hour to set up. Preheat oven to 325 degrees. Roll out dough on a floured surface and cut out pumpkin shapes with a cookie cutter. Transfer cutouts to a baking sheet and bake for 15 to 18 minutes until golden brown. Let cool completely, spread on filling, and sandwich cookies.
