  • 1 T. Olive Oil
  • 3 C. Pumpkin, pre-cut, peeled, and chopped
  • 2 potatoes, peeled and chopped
  • 1 L. chicken stock
  • 1 1/2 C. Cheese Tortellini
  • cracked pepper

Pour olive oil into a large saucepan over medium heat. Add the potatoes and pumpkin. Stir consistently for 2 minutes. Add in the chicken stock and increase to high heat and bring to a boil. Cover and cook for 15 minutes. Remove from heat and blend until smith with either a stick blender or a whisk. Return to medium heat and add your tortellini. Simmer for about 5 minutes or until pasta is fork tender.
