  • 1/4 C. butter, melted
  • 1 1/2 C. flour
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 3 eggs, separated
  • 1 C. milk
  • 1 C. canned pumpkin

Preheat greased waffle iron.  Combine flour, baking powder, salt, nutmeg, and cinnamon.  Beat egg yolks, then combine with milk, pumpkin, and butter.  Stir in dry ingredients.  Beat egg whites until they form soft peaks.  Fold into batter.  Bake waffles using waffle iron instructions.

Serve with: Berry Syrup
