Pungent Turmeric Roasted Cauliflower

- 1 cup sunflower oil
- 1 tbsp. ground cumin
- 2 tsp. turmeric
- 1 tbsp. cayenne pepper
- 4 heads of cauliflower, 1-inch florets
- Salt and pepper to taste
Preheat the oven to 425 degrees.
In a medium bowl, combine oil, spices, salt, and pepper. Divide the cauliflower and spread them evenly across 2
baking trays. Drizzle the oil mixture evenly over both trays and use your hands gently to mix the cauliflower together until thoroughly coated with spices.
Spread the cauliflower evenly across the sheet and sprinkle a little more salt over the top. Roast for about 1 hour until a nice golden brown. Make sure to switch the tray levels half way through roasting. Garnish with some fresh chopped parsley or nuts.
