Ingredients

  • 2 Tbs. Olive Oil
  • 1 Medium Onion, peeled and chopped
  • 2 Garlic Cloves, minced
  • 2 Medium Carrots, peeled and chopped
  • 1 16 oz. package Green Split Peas, picked over
  • 1 C. Fresh Basil Leaves, chopped
  • 1 tsp. Ground Ginger
  • 1 tsp. Smoked Paprika
  • 1/2 tsp. Sea Salt

Warm the olive oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until onion is tender and garlic is fragrant. Add carrots and continue to sauté for 3 more minutes. Stir in split peas. Pour 7 cups of water over the vegetable mixture. Bring to a boil, then reduce heat to low. Cover and let soup simmer for 40 minutes until split peas are tender. Stir in the basil leaves, ginger, paprika, and salt. Cook, stirring continuously, until basil has wilted. Carefully pour the soup mixture into a food processor or high-powered blender, and puree until smooth.
