  • The Chicken
  • 2 pounds chicken tenders
  • 2 cups Italian dressing
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 chopped chipotle chili, with sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons water
  • The Burrito
  • 2 cups cooked white rice
  • 1 tablespoon lime juice
  • 1/2 teaspoon sea salt
  • 1/4 cup chopped cilantro
  • 1 undrained can black beans
  • 1 packet sazon goya
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced onion
  • 1 teaspoon oregano
  • 1 package large burrito size tortillas
  • 1 package shredded Mexican cheese
  • Salsa
  • Sour Cream
  • Guacamole

Whisk together the Italian dressing, cumin, oregano, chipotle, vinegar, and water. Chop the chicken tenders into 1/2-1 inch pieces and place in the bowl with the marinade. Toss the chicken and cover the bowl with plastic wrap. Marinade the chicken for 2+ hours.

In a separate bowl, combine the rice with the lime juice, sea salt, and cilantro.

In a sauce pan, saute the onion and garlic in the olive oil. Pour in the can of beans, oregano, and the sazon goya.

Heat a little olive oil on high in a frying pan and cook the chicken.

Once the chicken is done cooking, put all of the ingredients that you want on your burrito and fold it into a burrito.

Enjoy with a side of chips and guacamole.
