  • 1 head bok choy
  • 1/2 pound orange sweet peppers
  • 1/2 pound shiitake mushrooms
  • 6 hard boiled quail eggs
  • 2 sprigs fresh majoram
  • 1 package quinoa (makes about 2 cups)
  • For the Dressing
  • 1/4 cup sesame oil
  • 1/4 cup rice vinegar
  • 1 thumb-sized piece of ginger

Prepare the quinoa according to package instructions. Allow to cool.

Slice the peppers, bok choy, and mushrooms and place in a large bowl. Quarter the quail eggs and add them to the bowl. Pour the cooled quinoa on top.

Peel and finely mince the ginger and add to a small bowl. Pour in the sesame oil and vinegar and whisk until combined.

Drizzle the ginger vinaigrette on top of the quinoa and toss the salad. Sprinkle majoram leaves on top. Serve immediately.
