Quck Tomato Soup

This easy to make home made tomato soup is delicious. Invite your children to the lunch table and serve them a bowl of this with a grilled cheese sandwhich.

Ingredients

  • 6 large beefsteak tomatoes (more if you want to increase the amount of soup; this goes for all ingredients)
  • 1 lb. of bacon, diced
  • 1 each green, red, yellow and orange peppers chopped
  • 1 lb. of mushrooms
  • Garlic powder, onion powder, and Italian spice, salt and pepper to taste

In large skillet, sauté bacon, onions and peppers, when these are soft, add sliced tomatoes and mushrooms let cook until tomatoes turn to liquid add your spices to taste.  Serve in a large soup bowl with lots of toast.

  • Okay, this sounds fabulous. Please tell me that you drained and blotted that pound of bacon before adding the rest of ingredients? I am going to try it and I love bacon, but I don't buy it because I love it too much. I am going to cook the bacon on newspaper in the microwave and then use x virgin olive oil for the veggies. And do you not add any water or broth or wine? And how many servings?
