Quesadilla Casserole

Served with a crisp green salad dressed with a light vinaigrette, this easy dish makes a great family meal. Shredded chicken can be added to the tortillas before baking if desired.

  • 10 large flour tortillas
  • 10 slices cheddar cheese, sliced thick
  • 10 slices Monterey Jack cheese, sliced thick
  • 1 4 oz. can diced green chilies
  • 1 large jar salsa of choice
  • 1 large onion, chopped
  • Toppings:
  • Sour Cream
  • Guacamole
  • Shredded cheese
  • Chopped black olives

Grease 10x13-inch pan. Place 1 slice of each cheese on each tortilla. Top with heaping tsp. each onion and green chilies. Roll each tortilla, folding ends in, and place seam side down in pan. Cover with salsa. Bake for 30 minutes in 425 degree oven. Serve with sour cream, guacamole, shredded cheese and chopped black olives.
