Queso Dip

Two kinds of peppers and Mexican cheeses make for a dip with a kick.

Ingredients

  • 1 lb. asadero cheese OR Monterrey jack
  • 2 jalapeno pickled peppers - chopped fine
  • 2 tsp. roasted red peppers
  • 1/2 C. diced onion, sautéed in butter until soft but not browned
  • 4 tsp. butter
  • 2 Tbs. unbleached flour
  • 1/2 C. milk

Directions

Melt 2 tsp butter in microwave, add flour and mix well. Mix in milk until all lumps are gone. Microwave for 2 minutes. Chop cheese and add to milk mixture, stirring until smooth. Microwave on high for 2 minutes until bubbly. In separate bowl, microwave onions in 2 tsp butter until soft, about 2 minutes. Mix peppers and cooked onion. Add to cheese mixture. Microwave on med for 2 minutes more. Enjoy with home baked tortilla chips.
