  • 1 C. all-purpose flour
  • 1 ¼ C. sugar, divided
  • 1 ½ sticks butter, melted
  • 1 tsp. vanilla
  • 1 Meyer lemon, seeds removed
  • 3 T. lemon juice
  • 3 large eggs
  • 1 ½ T. cornstarch
  • Powdered sugar for garnish

Preheat oven to 350 degrees. In a food processor, pulse together flour, ¼ cup sugar, ½ stick melted butter, and vanilla. Press crumble along bottom of a parchment-lined baking pan and bake for 20 minutes. Going back to the food processor, blend lemon and remaining sugar on high so that the lemon completely breaks up. Add in lemon juice, remaining butter, eggs, and cornstarch until smooth. Spread lemon filling over crust and bake for another 20 minutes. Dust with powdered sugar and refrigerate until firm before serving.
