Quick and Easy Beef Lasagna

- 1 lb. lean ground beef
- 1 (32 oz.) jar spaghetti sauce
- 32 oz. cottage cheese
- 3 C. shredded mozzarella cheese
- 2 eggs
- 1/2 C. grated Parmesan cheese
- 2 tsp. dried parsley
- salt, to taste
- pepper, to taste
- 9 lasagna noodles
- 1/2 C.water
In a large skillet, brown the ground beef over medium heat. Drain the grease and add the spaghetti sauce and simmer for 5 minutes. In a large bowl, mix together the cottage cheese, 2 C. mozzarella cheese, eggs, 1/4 C. Parmesan cheese, dried parsley, salt, and pepper.
To assemble, in the bottom of a 9 x 13 baking dish evenly spread 3/4 C. sauce mixture. Cover with 3 uncooked noodles, 1 3/4 C. cheese mixture, and 1/4 C. sauce. Repeat this twice more. Top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/ C. water to the edges of the pan. Cover with foil.
Bake at 350 degrees for 45 minutes. Uncover and cook for an additional 10 minutes.
