Quick and Easy Beef Stroganoff
Ingredients
- cubed beef stew meat or chuck steak
- 1 onion
- 2 cloves garlic
- 1 can golden mushroom soup
- 1 16-oz. container sour cream
- 1 bag wide noodles
Directions
Cut meat into bite-sized pieces and brown in olive oil or vegetable oil. Cut up onion and garlic and mix in with meat. After browning, add water and simmer approximately 1/2 hour. Stir in soup and simmer additional 30 minutes. Stir in sour cream. Prepare noodles. Pour stroganoff over the noodles and enjoy.

You should use just enough water to thin the sauce, about 1-2 tablespoons. Happy cooking!

I like to use sirloin, so when it is on sale I buy it, cut it into small cubes and freeze it in one pound packages. These are so handy when I want to make a four serving batch of chili, stew, and now stroganoff.
To cut the calories, I used plain Greek yougurt instead of the sour cream. It doesn't affect the taste and my family loves it. I also had some fresh mushrooms, so I added them too.
A real keeper...!
