  • 1 1/2 lbs. cauliflower, trimmed and broken into florets
  • 1/4 C. extra-virgin olive oil
  • 2 lg. garlic cloves, minced
  • 6 flat anchovy fillets, finely chopped
  • 1/4 tsp. hot pepper flakes
  • 1 lb. pasta
  • 3 Tbs. grated romano cheese
  • 2 Tbs. chopped fresh parsley

Cook cauliflower in a large saucepan of boiling salted water until tender. Should take 6-8 minutes. Drain in a colander and set aside. In a large frying pan, heat olive oil over medium-low heat. Add garlic, anchovies and hot pepper flakes. Cook, mashing with back of a spoon for 1-2 minutes, or until anchovies dissolve. Add cauliflower to the pan, toss to coat with oil, and heat through for 1-2 minutes. Meanwhile, cook pasta in a large pot of boiling salted water until tender but still firm (about 8-10 minutes). Drain. Add penne to cauliflower and cook, tossing, for 1 minute. Remove from heat and toss in cheese and parsley.
