Quick and Easy Chicken Chow Mein Sandwiches with Veggies and Salad

An inexpensive and quick meal, just right when the funds are low and time is short.

Ingredients

  • 1 pkg. of hamburger buns
  • 1 small bunch celery
  • 1 small head lettuce
  • 1 can sliced carrots
  • 1 can black olives
  • 1 can white chicken meat
  • 1 box chow mein with noodles

Directions

Chop celery. Reserve half for chow mein, half for salad. Open and drain canned carrots. Chop up one half for chow mein and reserve rest for salad. Open and drain can of black olives and set aside. Rinse and shred lettuce. Dry and add reserved carrots,celery and black olives. Toss and set aside.Open and prepare chow mein according to directions on box and enclosed sauce package. Remove package noodles and set aside.

When finished, open, drain and add canned chicken meat, reserved chopped celery and carrots. Stir and mix for 2 minutes longer, remove from heat.To serve, place the bottom of hamburger bun on plate, ladle a good serving of Chicken Chow Mein on bun, add noodles and top of bun. Ladle more of Chow Mein on bun. Serve with already prepared salad. (Raisins, sunflower seeds or other handy ingredients can be used in salad.) Recipe can be doubled for more portions or for heartier Chow Mein.
