  • Toppings:
  • 1 16 oz. container of mascarpone cheese
  • 1 large apple, sliced
  • ¼ C. of confection sugar
  • 2 kiwi, peeled and sliced
  • 1 pt. blueberries
  • 1 pt. raspberries
  • 1 pt. strawberries, sliced
  • 1 mango, peeled and sliced
  • 1 lemon
  • 1 squeezable caramel topping
  • Crust:
  • 2 C. wheat flour
  • 2 C. white flour
  • ¼ C. vegetable oil
  • 1 g. bakes yeast
  • 2 T. sugar
  • 1 C. water
  • Salt
  • Other:
  • 1 pizza cooking stone

For your crust, place all ingredients into a large bowl and knead for 10 minutes. Add more flour and water. It should be soft, not wet. When finished, let it sit out at room temperature to rise. While this is happening open your mascarpone cheese and put it into a bowl. Add the confection sugar, and the squeezed juice from the lemon. Mix and then set aside.
Preheat oven at 450 degrees. Work the dough slowly spreading it out. Begin to layer the mascarpone cheese and fruit toppings. Bake for 10-15 minutes. Let cool for 10 minutes and enjoy!
