  • 4 eggs
  • 1/2 C. butter
  • 1 Tbs. vanilla extract
  • 1 1/2 C. sugar
  • 2 Tbs. cornstarch
  • 1 packaged pie crust dough

Preheat oven to 350 degrees F. Cut lemon into small chunks. Blend lemon until almost smooth. Add eggs, butter, vanilla, sugar and cornstarch. Mix until smooth and creamy. Pour mixture on unbaked pie crust. Bake for 35 to 40 minutes.
