  • 2 T. olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 (14 oz.) cans vegetable broth
  • 1 ½ C. cooked lentils, rinsed and drained
  • 1 T. red wine vinegar

In a saucepan, heat oil and sauté onion, carrots, celery, and garlic until softened. Season with salt and pepper, add broth, and bring to a boil. Stir in lentils, cook for 5 minutes as soup begins to thicken. Stir in vinegar and serve.
