  • 2 T. unsalted butter
  • kosher salt
  • 3 lb. Yukon gold potatoes, peeled and thinly sliced
  • 2 T. all-purpose flour
  • 1 C. low-fat milk, room temperature
  • 1 C. whole milk, room temperature
  • freshly ground pepper
  • 1/4 tsp. freshly grated nutmeg
  • 1/4 C. grated gruyere cheese

Preheat your oven to 350°F and lightly grease a large baking dish. Fill a large pot with water, add salt, and bring to a boil. Add potatoes and cook for nine minutes. Drain and return to the pot. In a medium saucepan, melt butter. Whisk in flour to form a paste. Stir frequently for one minute before slowly adding in both milks. Continue stirring frequently while the mixture comes to a simmer. Once thickened, remove from heat and add a dash of pepper and salt. Stir in the nutmeg. Pour mixture over the potatoes, tossing gently to coat. Place the potatoes in your prepared baking dish and sprinkle with cheese. Bake for 10 minutes before switching to a broiler setting for five minutes. Let stand for 10 minutes before serving.
