  • 1 pkg. pad thai noodles
  • 2 Tbs. vegetable oil
  • 2 eggs, beaten
  • 1 C. green prawns, shelled
  • 1 tsp. fish sauce
  • 1/8 tsp. red pepper flakes
  • 1/2 C. roasted peanuts, chopped
  • 1 C. fresh bean sprouts, trimmed
  • 1/2 C. fresh shallots, trimmed and cut into small pieces

Cook noodles according to package directions. Heat oil in skillet. Pour in eggs and cook gently until set. Set eggs aside. Add prawns and stir fry until cooked through. Remove and set aside. Add drained noodles to skillet. Mix with fish sauce and red pepper flakes. Stir fry with noodles until heated through. Add prawns and toss together. Cut omelette into 1" pieces. Mix all ingredients including peanuts, sprouts and shallots together in bowl before serving.
