Quick-and-Easy Potato and Onion Bake

- 2 lb. Baby Potatoes, halved
- 1 lb. Small Onions, peeled and sliced
- 1/4 C. Extra-Virgin Olive Oil
- 2 Tbs. Butter, melted
- 1 tsp. Sea Salt
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper. In a large mixing bowl, combine all ingredients and toss to coat. Spread the potato and onion mixture in a single layer across the baking sheet. Bake for 40 minutes until potatoes and onions are cooked through.
