Quick and Easy Potatoes and Tomatoes

- 1 T. olive oil
- 1/2 lb. chicken sausage
- 1/2 yellow onion, sliced into 1/2-inch portions
- 1 1/2 lb. red potatoes, chopped into 1/2-inch pieces
- 2 garlic cloves, minced
- 2 C. cherry tomatoes, halved, divided
- 1 T. chopped rosemary
- 1 T. chopped basil
- 1/2 tsp. sea salt
- 1/2 tsp. freshly ground black pepper
Heat a large skillet over medium-high heat and then add the sausage. Cover and cook until the meat is browned. Remember to turn the sausage once when cooking. Add the potatoes, onion, salt, and pepper when the sausage is browned, cover and remember to stir regularly. When the sausages are almost cooked through, remove them from the skillet. Evenly spread out the potato mixture and cook for 10 minutes.
Slice the sausages to create 1/2-inch pieces and then transfer the sausage pieces back into the skillet. Add the rosemary, garlic, and one C. tomatoes. Cook for five minutes and then add basil and the rest of the tomatoes. Stir so the ingredients can be thoroughly mixed together. Serve.
