You will only need five ingredients plus a bit of salt and pepper to bake up these tender bunches of asparagus stalks wrapped in razor-thin slices of prosciutto. A drizzle of a homemade lemon vinaigrette ties the meat and veggies together.

  • 2 lb. Medium Asparagus Stalks, trimmed
  • 6-8 Prosciutto Slices
  • 1/4 C. Extra-Virgin Olive Oil
  • 2 Tbs. Lemon Juice
  • 2 tsp. Dijon Mustard
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

Preheat the oven to 400 degrees. Line a 9x13" baking dish with parchment paper. Tightly wrap up 5-6 stalks of asparagus in each slice of prosciutto. Evenly spread the wrapped asparagus stalks across the prepared baking dish. In a small bowl, whisk together the olive oil, lemon juice, and mustard. Season with salt and pepper to taste. Drizzle the lemon vinaigrette over the asparagus. Roast for 15 minutes or until asparagus stalks are tender.
