  • 3 C. Vegetable Broth
  • 2 C. Unsweetened Coconut Milk
  • 1 tsp. Curry Powder
  • 1 Medium Carrot, peeled and roughly chopped
  • 1 C. Broccoli Florets, chopped
  • 1 C. Frozen Green Beans, thawed and drained
  • 8 oz. Ramen Noodles
  • 1/2 lb. Medium Shrimp, peeled and deveined
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

In a large stockpot over medium-high heat, whisk together the broth, coconut milk, and curry powder. Bring to a boil. Stir in the carrot, broccoli florets, green beans, ramen noodles, and shrimp. Cover and cook for about 3-4 minutes, or until the shrimp are cooked though, and the noodles and vegetables are tender. Season with salt and pepper as needed.
