Here's a go-to dinner in many households that's quick and easy to make. This chicken stir-fry is filled with cashews and snow peas!

  • 3 Tbs. soy sauce
  • 1 Tbs. chicken broth
  • 2 tsp. sesame oil
  • 2 chicken breasts, boneless and skinless (cut into 1" pieces)
  • 1 Tbs. cornstarch
  • 1/3 C. chicken broth
  • 1 Tbs. sugar
  • 1 Tbs. rice vinegar
  • 1 Tbs. hoisin sauce
  • 1/2 tsp. ginger, minced
  • 1/4 tsp. salt
  • 2 tsp. canola oil
  • 1 1/2 C. snow peas
  • 2 medium carrots
  • 1/2 C. cashews, toasted and chopped

In a large plastic bag, combine 2 Tbs. soy sauce, broth and 1 tsp. sesame oil. Add chicken. Turn to coat and marinate overnight.

Mix cornstarch and broth. Stir until smooth. Mix in sugar, vinegar, hoisin sauce, ginger, salt, remaining soy sauce and sesame oil. Set aside.

Drain chicken and toss out marinade. In a large skillet, stir fry chicken in 1 tsp. canola oil until no longer pink. Remove from heat. Add remaining ingredients until tender. Return chicken to pan and stir in sauce mixture. Bring to boil and cook 1 minute. Sprinkle with cashews.
