  • 2/3 C. white rice, uncooked
  • 3 Tbs. rice vinegar
  • 1 1/2 tsp. salt
  • 3 Tbs. white sugar
  • 4 sheets of nori seaweed
  • 1/2 cucumber, peeled and chopped
  • 2 Tbs. ginger
  • 1 avocado
  • 1/2 lb. imitation crabmeat, flaked

Preheat oven to 300 degrees F. Boil 1 1/2 C. water in a medium saucepan. Add rice and stir. Reduce heat and cover. Simmer for 20 minutes. In a small bowl, mix vinegar, salt and sugar. Mix with rice. Heat nori on baking sheet for 1 to 2 minutes or until warm. Place nori on sushi mat. Wet hands and spread a thin layer of rice on nori and press into thin layer. Arrange remaining ingredients equally for each sushi roll center. Cut each roll into 5 slices with a wet and sharp knife.
