Ingredients
- 3-4 chicken breasts
- 2 T. Italian seasoning
- 3 T. extra virgin olive oil, divided
- 1 ½ C. white mushrooms, chopped
- 1 large onion, chopped
- 1 red bell peppers, sliced
- 1 orange bell pepper, sliced
- 4 garlic cloves, minced
- Salt and pepper to taste
- Pasta sauce
- 1 package linguine, cooked and drained
- Fresh basil for garnish

Directions
Preheat oven to 425. In a baking dish, coat chicken breasts with 2 tablespoons of the olive oil and sprinkle with Italian seasoning. Bake for 20-25 minutes until chicken is no longer pink. In a large skillet, saute garlic and onions in oil until fragrant. Add in red and orange bell peppers and cook until tender. Add mushrooms and season with salt and pepper. Pour in pasta sauce and simmer for 3-5 minutes. Serve chicken over linguine with sauce and garnish with basil.
