Ingredients

  • 1 lb. high fiber pasta
  • 1 lb lean ground beef
  • 3 cloves garlic
  • 1/2 cup diced onion
  • 1 sprig thyme
  • 2 tbsp basil
  • 28 oz canned tomatoes
  • 1 tsp red pepper flakes
  • 8 oz fresh mozzarella
  • 1/2 cup Parmesan cheese

Preheat your oven to 400 F and power boil water for your pasta.
Next, Spray a large saute pan with cooking spray and brown the ground beef for about 5 minutes. During this time, dice your onions and garlic.
Add onion and garlic and continue to saute pan and allow the mixture to cook for an additional 3-4 minutes. By this point, your water should be boiling. Add your pasta to the boiling water and let it cook.
Add the crushed tomatoes, basil and thyme sprig, to the ground beef saucepan, along with salt and pepper to taste. Allow this to simmer for an additional 5 minutes.
As you beef simmers, check your pasta. It will have been cooking about 7 minutes now, and if it is al dente, you can drain it and set aside.
Return the pasta to the pot. Once meat sauce is ready, mix it in with the pasta in the pot. Then, add your mozzarella pearls, 1/4 cup of Parmesan cheese, and more salt and pepper to taste. Mix the content of the pot well.
Pour the entire content of the pot into a large baking dish and sprinkle the remaining mozzarella and parmesan cheese on top.
Cook for 20 minutes or until the cheese begins to brown and bubble. Serve immediately.
