Quick Beef Barley Soup

This beef barley soup recipe is perfect for a cold night. It's easy and so delicious that no one will know it was so simple!

Ingredients

  • 1 1/2 lb. ground beef
  • 10 C. water
  • 10 beef bouillon cubes
  • 1 16-oz. bag frozen mixed vegetables
  • 1 15-oz. can tomato sauce
  • 2/3 C. pearl barley
  • 1 10-oz. can Rotel tomatoes (optional)

Directions

Brown the beef in stockpot and drain off all fat. Add water, bouillon cubes, mixed vegetables and tomato sauce and Rotel tomatoes (if you are looking for a spicier flavor,) and bring to a boil. Add barley and cook for 45 minutes.
