Quick Beef Barley Soup
Ingredients
- 1 1/2 lb. ground beef
- 10 C. water
- 10 beef bouillon cubes
- 1 16-oz. bag frozen mixed vegetables
- 1 15-oz. can tomato sauce
- 2/3 C. pearl barley
- 1 10-oz. can Rotel tomatoes (optional)
Directions
Brown the beef in stockpot and drain off all fat. Add water, bouillon cubes, mixed vegetables and tomato sauce and Rotel tomatoes (if you are looking for a spicier flavor,) and bring to a boil. Add barley and cook for 45 minutes.
