  • 3 oz. butter
  • 1 medium onion, diced
  • 1 rib celery, diced
  • 1. tsp. pepepr
  • 1/3 tsp. garlic powder
  • 1/8 tsp. garlic powder
  • 1/8 tsp. dry mustard
  • 3 oz. flour
  • 12 oz. beer
  • 24 oz. whole milk
  • 10 oz. sharp Cheddar cheese, shredded
  • 6 oz. nutty cheese, shredded
  • 4 strips bacon, cooked crisp and crumbled
  • 8 oz. broccoli, chopped
  • salt, to taste

In a large pot, melt the butter over medium heat. Add the onion, celery, and all spices except salt. Cook until the vegetables are soft, about 5 to 7 minutes. Cook the broccoli and set aside. In another saucepan, heat the milk over low heat. Add the flour to the onion and celery mixture and cook for about 1 minute. Slowly whisk in the beer and add the milk.

After the liquids are incorporated, reduce the heat to medium low and stir in the cheeses. Allow the soup to cook for 8 to 10 minutes, stirring occasionally. Add the broccoli and bacon. Stir to combine and cook for an additional 2 minutes.
