  • 3 C. chicken broth
  • 2 boneless chicken breasts, chopped
  • 1 tsp. oregano
  • Salt and pepper to taste
  • ½ C. water
  • 1 T. olive oil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 C. mushrooms, chopped
  • 3 T. flour
  • 1 C. milk

In a large saucepan, combine broth and water and bring to a boil. Add chicken, oregano, salt, and pepper; stir well. In a skillet, heat oil and sauté garlic, onion, and mushrooms until tender. Stir in flour and milk until well combined. Transfer to a blender, blend until desired consistency, and add into broth. Stir and continue cooking over medium heat for about 30 minutes until soup thickens.
