  • 4 large flour tortillas
  • 2 C. shredded cheddar cheese
  • oil
  • cooked chicken, diced

Heat a large frying pan at medium-high heat Add about 1/2 tsp. oil and spread it around the bottom of the pan. Place one tortilla in the pan. Flip the tortilla a few times, every 10 seconds. Air pockets should start to form in the tortilla. Once this has happened, sprinkle 1/2 C. cheese over the top. Add the chicken. Reduce the heat to low and cover the pan. After several minutes, flip half the tortilla over onto the other side like an omelet. If the quesadilla isn't browned to your preference, turn the heat to high and flip every 10 seconds until it is. Repeat with the other tortillas.
