Quick Coconut Shrimp
Serving Size / Yield
- 1 1/4 cup flour
- 1/4 teaspoon seafood seasoning
- 3/4 cup pineapple juice
- 1 egg
- 2 cups flaked coconut
- 1 pound peeled and deveined shrimp
1. In large bowl, combine egg, flour, seasoning, and pineapple juice.
2. Dip shrimp into batter, then dredge in coconut.
3. In deep fryer or skillet, heat oil to 375 degrees, and fry each shrimp until golden. Turn occasionally.
4. Drain and serve with various dipping sauces.
