  • For the Onions
  • 4 red onions
  • ¼ tsp. salt
  • 1 T. olive oil
  • For the Filling
  • 3 oz. cream cheese, softened
  • 1 tsp. salt
  • 1 tsp. herbs de Provence
  • ½ tsp. minced garlic
  • ¼ C. sour cream
  • For Topping
  • 1 T. butter, softened
  • 1 T. parsley, chopped
  • 2 slices bacon, cooked and chopped
  • ½ C. bread crumbs

Preheat the oven to 400 degrees. Peel the onions. Cut the top and bottom of the onion. Dribble olive oil over the onions and brush it all over. Spice the onion with salt. Leave them in the oven for about 50 minutes. Remove them from the oven and set them aside to cool. Remove the center of the onions leaving a shell. About 2 to 3 layers of onion. Place a slice of the onion center that was removed to each of the onion, so you can form a base. Chop the reaming onion centers. Take a bowl and combine the salt, sour cream, herbs de Provence, cream cheese, garlic and chopped onions. Put this filling into each onion. In a separate bowl mix the breadcrumbs, butter, parsley and bacon. Put this on top of each onion. Place the onions into the oven and let them bake for 20 minutes. Enjoy.
