Quick Hot Dish

A very quick, inexpensive recipe that can be doubled easily to fit into a 13x9 dish. Can be made all in one dish if browning meat in microwave. Great to make for kids when you're running late.

Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 3/4 C. celery, chopped
  • 1 C. instant rice, raw
  • 2 Tbs. soy sauce (or to taste)
  • 1 can cream of mushroom soup (undiluted)
  • 1 C. boiling water

Directions

In a 2 qt. casserole dish, microwave crumbled ground beef on medium high for 5 to 6 minutes, drain. (Or just brown and drain in fry pan. Combine all other ingredients with the hamburger except the boiling water. Spread loosely in dish. Pour boiling water over it all. DO NOT STIR!! Cover dish with plastic wrap and microwave on High for 12 to 15 minutes. Let stand about 5 minutes after removing plastic wrap. (Extremely hot-use care removing the plastic.)
