Quick Pecan Fudge

Chocolate chips, marshmallow and pecans makes this a rocky-road type fudge.

Ingredients

  • 1 1/2 C. sugar
  • 2/3 C. evaporated Milk
  • 2 Tbs. butter
  • 1/4 tsp. salt
  • 1 1/2 C. semi-sweet chocolate morsels
  • 4 oz. miniature marshmallows
  • 1 tsp. vanilla
  • 3/4 C. chopped pecans

Directions

Line an 8x8x2-inch pan with aluminum foil; set aside. Combine sugar, evaporated milk, butter and salt in a heavy-medium saucepan over medium heat. Bring to a boil; stirring constantly. Boil 4 to 5 minutes. Remove from heat; stir in semi-sweet chocolate chips, miniature marshmallows and vanilla. Stir vigorously until the marshmallows are melted, about 1 minute. Pour into prepared pan. Sprinkle with chopped pecans, pressing in lightly. Refrigerate until firm. Cut into 16 pieces.
