Quick Plum Pie

You won't want to stick your finger in this plum pie, but a knife and fork will do nicely.

Ingredients

  • 1 1/2 Lb. fresh plums, halved and pitted
  • 1 9-in. frozen pastry shell (in foil pan)
  • 1/2 C. packed brown sugar
  • 2 Tbs. flour
  • 1 tsp. cinnamon
  • 1 Tbs. lemon juice

Directions

Arrange plums rounded side up in tight overlapping rings in the pastry shell. Mix sugar, flour and cinnamon and sprinkle over plums. Drizzle with lemon juice. Place pie on foil or in baking pan to catch spillovers; bake in preheated 450 degree for 30 minutes or until plums are tender and crust is golden. If rim of crust browns too quickly, cover with strip of foil.

Serve slightly warm. Good with vanilla ice cream.
