Who doesn't love potato gratin? Well this classic dish just got an upgrade with chopped yellow and green peppers, they are paired with sweet and smoky paprika and topped with cheese. This hearty dish hasn't tasted better.

  • 1 lb. Russet potatoes, sliced thin
  • 1 medium green bell pepper, chopped roughly
  • 1 medium yellow pepper, chopped roughly
  • 2-3 paprika peppers, chopped roughly
  • 2 C. Monterey Jack cheese, shredded
  • 2 eggs, beaten
  • salt and pepper

Preheat toaster oven on boil to 450ยบ.

In a long casserole pan, layer potatoes and peppers, seasoning each layer to taste. Poor beaten eggs over potatoes and peppers, then top with cheese. Place pan into toaster oven and let cook for 10-15 minutes or until potatoes are tender.

Let cool for about 5 minutes before serving.
