Quick shrimp fried rice – so good. It’s a great recipe the way it is and great with a few modifications.

  • 1 lb. shrimp
  • 1 T. sesame seed oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 carrots, chopped
  • 2 eggs, beaten
  • ½ C. frozen peas
  • ¼ C. soy sauce
  • 1 C. long grain rice
  • 2 C. water
  • 2 T. olive oil
  • Salt
  • Pepper

In a saucepan over medium heat, add in the water and long grain rice. Add in a pinch of salt. Let it cook for 10-15 minutes. Drain once done. Meanwhile, Season the beaten eggs with a pinch of salt and pepper. In another saucepan, add in the olive oil and cook the egg for 2 minutes. Remove the egg and place it to the side. Sauté the shrimp for 5-10 minutes in the same saucepan. Add in the chopped onion. Add in the sesame oil. Add in the remaining ingredients, including the eggs and cooked rice. Toss well. Serve and enjoy!
