  • 2 potatoes
  • 3 oz. smoked salmon
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 1 T. butter, melted
  • 1 T. olive oil
  • 2 T. sour cream

Boil the potatoes in water for 5 minutes, so they can get soft. Peel the skin off. Grate the potatoes. Combine the grated potatoes, salt, pepper and melted butter. Set aside. Meanwhile, heat up the olive oil over medium heat. Scoop up ¼ C. of the potato mixture into a ball and press it down. Place potato pancake into the hot olive oil and brown it on both sides. Repeat for the rest of the potato mixture. Serve potato pancakes in a stack, topped with smoked salmon and sour cream. Garnish with dill if desired. Enjoy!
