  • 1 1/2 C. shredded Monterey Jack cheese
  • 1 1/2 C. shredded Cheddar cheese
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 C. picante sauce
  • 1 medium red bell pepper, diced
  • 1/2 C. green onion, chopped
  • 1 tsp. cumin
  • 8 (7-8 in.) flour tortillas
  • shredded lettuce
  • tomato, chopped

In a bowl, combine 1 C. Monterey Jack, 1 C. cheddar cheese, cream cheese, 1/4 C. picante, onion, and seasonings. Mix well. Spoon 1/4 C. cheese mixture in the middle of each tortilla. Roll them and place them seam side down in a 13x9 baking dish. Cover with the remaining sauce. Bake for 20 minutes and 350 degrees. Top with the lettuce and extra picante sauce.
