  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • ¾ cup quinoa, rinsed
  • ¾ cup corn kernels
  • 2 tomatoes, chopped
  • 1 teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon salt
  • 1¼cups water
  • 1 can black beans, rinsed and drained
  • ¼ cup fresh cilantro, chopped

In a saucepan, heat up the oil. Add the onion and cook until tender. Add the tomatoes, making sure to stir well. Cook for 2-3 minutes or until heated through. Stir in the quinoa, cumin, chili powder, salt and water. Bring to a boil and cover. Simmer for 15 minutes, or until quinoa is barely tender. Stir in the beans and the cilantro. Simmer uncovered for about 3 more minutes before removing from heat and serving.
