  • 1 acorn squash
  • 1 T. butter
  • 1 C. cooked quinoa
  • 1 T. olive oil
  • 1 small yellow onion, chopped
  • 6 scallions, thinly sliced
  • 2 cloves garlic, chopped
  • 1 T. fresh lemon juice
  • salt and pepper to taste

Heat your oven to 400°F. Slice acorn squash in half. Scoop out seeds and place both hollowed squash halves in a baking dish. Divide butter in half and place a pat in the middle of each squash. For seasoning, you can add a pinch of both salt and pepper. Add 1 cup of water to the bottom of your baking dish to prevent burning squash. Place in oven and bake for 65 minutes or until inside of squash is tender.
In a large skillet, sauté onion in olive oil over medium heat for 5 minutes. Add garlic and sauté for an additional minute. Add scallions and stir. Remove skillet from heat. Add the cooked quinoa and lemon juice. Mix together and season with salt and pepper to taste. Scoop half of quinoa mixture in each squash. Best if served immediately.
