  • 1 C. quinoa, cooked
  • 2 large bunches of parsley
  • 1 handful fresh mint
  • 1/2 C. lemon juice
  • 1/2 C. olive oil
  • 4 medium tomatoes
  • 4 cucumbers, diced
  • 2 C. red onions, chopped
  • salt and pepper, to taste
  • pinch of allspice
  • 1 lemon sliced

In a food processor or blender, chop the parsley, mint, and red onions roughly. Dice the tomatoes and cucumbers. Add the parsley, mint, and red onions to the the tomatoes and cucumbers in a bowl. Mix in the allspice, salt, and pepper. Gradually add the lemon juice and oil, tasting and tossing until the preferred taste is achieved. Serve with a slice of lemon as desired.
