Quirky Turkey Chipotle Chili

Ingredients
- 2 lbs. ground turkey
- 1 onion, halved, with each half quartered
- 1/2 lg. red bell pepper, seeded, cored, and chopped
- 2 tsp. minced garlic
- 1/2 7-oz. can chipotle chilies in adobo sauce (chilies only)
- 1 packet chili seasoning mix
- 1 tsp. chili powder
- 2 tsp. salt
- 2 tsp. freshly ground black pepper
- 2 tsp. sugar
- one 15 1/2-oz. can dark kidney beans, drained
- one 15 1/2-oz. can light kidney beans, drained
- one 14 1/2-oz. can chili ready diced tomatoes
- one 28-oz. can stewed tomatoes seasoned with sea salt
- one 16-oz. jar salsa medium or hot
- one 8-oz. pkg. shredded Mexican-blend cheese (optional)
Directions
On a medium-high burner, brown meat in a large stew pot; stir often. Once meat has browned, add onion, bell pepper, garlic, chilies, chili seasoning, chili powder, salt, pepper, and sugar. Mix well. Fold in beans, tomatoes, and salsa. Mix. Turn burner down to medium heat and simmer for 1 1/2 to 2 hours, stirring occasionally. Serve warm in bowls with teaspoons of shredded cheese on top.
