Rabbit casserole takes about 2 and half to 3 hours to fully prepare and cook, so plan plenty of time. The results are well worth the wait, the tender rabbit topped with broccoli and cheese melts in your mouth.

  • 1 lg. rabbit (2 lbs.)
  • 1 pkg. broccoli spears
  • 1 can cream of chicken soup
  • 1 C. grated cheddar cheese
  • 1/4 C. onion, chopped
  • 1/4 C. carrots, chopped
  • 1/4 C. celery, chopped
  • salt and pepper to taste

Simmer rabbit in a salted kettle of water with onion, carrots and celery for 1 1/2 hours. Meat should be tender and fall from the bones. Let rabbit cool, then bone it. Place rabbit pieces in the bottom of a buttered casserole dish. Spread the thawed, drained broccoli over the top. Pour the cream of chicken soup over the whole dish. Salt and pepper to taste. Bake at 325 degrees for 1 hour. Take out and sprinkle cheese on top, return to oven until cheese melts.
